Good Value restaurants in the Aude. Always call ahead. In winter to check they aren't closed, and in the summer to make a reservation. In France eating hours are regimented. Do not expect to be able to roll up and sit down to a meal outside of the hours of 12pm to 2 pm and 7pm to 9pm. On the other hand there is no danger of your being thrown off your table for the next round of diners - a practise now common in the UK and Ireland that to the French simply defies belief. You can expect to find decent duck almost everywhere, and cassoulet. Here we have selected a few restaurants that offer a little bit extra value for money or something out of the ordinary. By the way, the owners are now looking for the right person to hand over to, and are prepared to offer a free hand over training for the right person. Having spent twelve years realising their dream into a successful business, it is important to them that the location will live on as a quality hostellerie. For the moment they are open as usual.
Auberge de Cavanac, Chateau de Cavanac, Cavanac,
5 mins south east of Carcassonne, Tel: 0468 796104
Perhaps the best value to be found. At a fixed price of
25 euros diners are treated to five courses, amuses bouches,
aperitifs, digestifs with wine included. Lobster and foie
gras offered for entries. Freshwater crayfish (messy but
delicious) is amongst the fish offerings, and the main course
offers a choice of barbecued duck, beef or lamb. Not great
for vegetarians.

Unpretentious and friendly restaurant well off the beaten

a peak that can be seen for miles around and creates its

open in the winter. Usually a selection of game is available.

and other forms of taxidermy in the décor.
